苦瓜中常量与微量元素的测定毕业论文

摘 要
目前文献中报道的主要是苦瓜中生物碱类、蛋白质类、有机酸类等有效成分的测定,很少见到苦瓜中微量与常量元素含量测定的报道,故本文主要目的是建立苦瓜中多种微量和常量元素的测定方法。目的:测定苦瓜中常量与微量元素。方法:采用浓硝酸-双氧水(5:3)的混合溶液对样品进行消解,火焰原子吸收光谱法测定苦瓜中常量与微量元素(K、Ca、Mg、Cu、Zn)的含量。结果:各元素线性关系良好,基本上相关系数rgt;0.987。苦瓜中K、Ca、Mg、Cu、Zn含量依次为32173.412,1261.557,4700.429,119.507,75.564μg.g-1。结果表明苦瓜中含有丰富的K、Ca、Mg。该法方法稳定可靠。

Abstract
So far,reported in the literatures are mainly about the determination of effective components in balsam pear,such as Alkaloids,proteins,Organic acids and so on . But we can not often see the research about the determination of trace elements and constant in balsam pear.so the main purpose of this paper is to establish a effective method to determine the trace elements and constant in balsam pear.Objective: To develop a method of determination of trace and constant elements in balsam pear.Method: The content of K,Ca,Mg,Cu,Zn in balsam pear was directly determined by flame atomic absorption spectrophotometry after digestion with HNO3-H2O2( 5∶3) at heating and normal pressure.Result: All calibration curves showed good linearity ( r > 0. 987) .The result showed that The content of K,Ca,Mg,Cu,Zn in balsam pear were 32173.412,1261.557,4700.429,119.507,75.564μg.g-1, respectively.It was concluded that trace and constant elements (K, Ca, Mg) in balsam pear is rich. It is a reliable method for the determination of the trace and constant elements in balsam pear.

1.1文献综述
1.1.1概况
苦瓜为葫芦科苦瓜属的1 年生蔓性植物, 是一种特殊的果菜。苦瓜原产于印度东部, 约在明代初传入我国南方。据报道, 苦瓜含有丰富的营养成分和生物活性成分, 具有清热,祛心火, 解毒, 明目, 补气益精, 止渴消暑, 治痈, 平稳降低血糖,调节血脂, 降低血压的作用, 有“植物胰岛素”的美誉。
1.1.2苦瓜的研究进展[2-4]
苦瓜的营养价值很高,每100g 嫩瓜中含蛋白质0.9g,脂肪0.2g,碳水化合物2.6~3.5g,粗纤维1.1g,维生素A18~22mg,维生素B0.7mg,维生素C56~120mg,尼克酸0.3mg,钙18~22mg,磷19~32mg,铁0.6mg,此外还含有多种氨基酸如谷氨酸、丙氨酸、脯氨酸、瓜氨酸等,以及胡萝卜素、果胶等营养成分。苦瓜的维生素C含量是蔬菜中含量最高的,是常见番茄的7~10倍。在试验中发现,苦瓜果实在成熟过程中各种营养物质如维生素C等都会下降,因此食用苦瓜应以嫩瓜为宜。
