随着生活水平和对健康方式的追求以及糖尿病患者、乳糖不耐受症患者人口基数的不断增长,低乳糖或无乳糖食品开发越来越受到研究者青睐。
目前低乳糖或无乳糖牛奶的制备主要是添加乳糖酶,使乳糖分解为单糖,但实际糖含量却未减少。
膜技术凭借其分离精度高、操作过程简单、经济型好、无相变、节省能耗等优点,广泛应用在生物、医药、环保等领域,采用膜分离技术实现乳糖高效脱除、蛋白浓缩制备高蛋白低乳糖牛奶。
