摘 要

本文针对于我国鸡蛋的质量安全问题，结合养殖场的现状和分析蛋鸡养殖场的规模和特点，提出了就鸡蛋生产的可控性，建立一套蛋鸡养殖场的质量管理体系。就质量管理体系的理解，论述其核心思想和原则。从分析消费者对鸡蛋质量的担忧，到找出影响鸡蛋质量的关键问题。从而进行质量管理体系的策划与设计。包括其质量方针、质量目标、组织机构及职责和资源的配置。阐述了质量控制的方法，并详细的研究了蛋鸡养殖场的关键环节管理。最后，就质量管理体系的试运行与控制进行了详细的说明。具体的章节内容如下：

第一章是绪论，包括了介绍本文的研究对象、研究背景、研究的意义和研究的方法及思路。

第二章是对质量管理体系的理解。包括了质量管理体系的定义及内涵、质量管理原则、质量管理体系的内容和质量技术。

第三章是蛋鸡养殖场的质量管理体系的策划与控制。详细的阐述了关于鸡蛋与养殖的国家标准，并构建出质量方针与目标，构建蛋鸡养殖场的组织机构及职责，资源配置。

ABSTRACT

The paper needle for the quality and safety of our eggs, combined with farm status and analysis of laying hens field size and characteristics, proposed the controllability of egg production, the establishment of a poultry farm of quality management system. 第1章 绪论

1.1研究对象

论文针对我国蛋鸡养殖场养殖规模特点，养殖场的蛋鸡存栏量为5000~10000只，养殖方式为车间化养殖。研究构建出一套适合蛋鸡养殖场的质量管理体系。蛋鸡的养殖过程总体来说分为三个阶段：育雏阶段、育成阶段、产蛋阶段。如下：

育雏阶段：即养殖厂购买入母小鸡，将小鸡养殖至较大体型时的阶段，一般体重小于1斤。
