摘 要

本文首先由我国食品安全现状引发对食品质量安全问题的思考，然后提出质量控制体系是食品质量安全的保障这一观点，进而对食品质量控制体系进行研究。

论文以中百仓储为例，分析其食品质量控制体系的各个环节，并针对体系中的关键环节进行质量控制，然后就目前体系中存在的问题提出了相关的建议，最终完成食品质量控制体系的建立。

Abstract

Firstly by the food safety situation in China triggered thoughts of food quality and safety problems, and then put forward the quality control system is the guarantee of food quality and safety of the view, and further research on the food quality control system.

The Zhongbai supermarket as an example. Analysis the food quality control system in all aspects, and in view of the system in the key link of quality control, then puts forward related suggestions of the problems existing in the present system, the final completion of the establishment of food quality control system.

1.1研究对象

本论文是以连锁超市的食品为研究对象的，连锁超市出售的食品种类繁多，并且拥有庞大的消费群体，很多城市居民会选择超市来采购食品，这是一个与人们日常生活息息相关的问题，因此，如何保障超市的食品质量就显得尤为重要了。
