摘 要

近些年来，人们的消费能力逐渐提高，对水果、蔬菜、肉和奶等生鲜产品的需求快速增长。与一般的产品比较，生鲜产品容易腐烂，而且在流通的过程中需要更高要求的温度和湿度，这样物流风险就变大。冷链物流的水平和公司的效益有很大关联，而冷链水平的高低取决于对冷链风险的管理好坏。

本文完成了以下几点工作：（1）在相关冷链风险管理理论的基础上，分析冷链物流基本结构，运用流程分析法，对冷链在采购、仓储、分拣、运输等环节的潜在风险和影响因素进行了识别，并通过专家打分对关键风险指标进行了筛选，参照指标体系建立的原则建立冷链风险评价指标体系。（2）确定了风险评价指标体系后，运用模糊物元分析法建立了冷链风险评价模型，采用熵权法计算各指标的权重，并通过对各指标的欧式贴近度进行计算，得出整个冷链以及采购、存储、分拣和运输四个关键环节的风险水平。（3）选取山东盖世国际物流集团进行实例分析，运用数据计算，然后分析风险评价结果，得出冷链总体风险水平高，采购和分拣环节风险等级高，储存和运输环节风险等级中等。

本论文对盖世冷链物流的风险评价符合其实际情况，评价模型是有科学性的，对冷链物流风险管理的研究具有一点借鉴意义。

Abstract

In recent years, people's consumption capacity has gradually improved, and the demand for fresh products such as fruits, vegetables, meat and milk has increased rapidly. Compared with general products, fresh products are easy to rot, and need higher temperature and humidity in the process of circulation, so the logistics risk becomes greater. The level of cold chain logistics is closely related to the company's benefits, and the level of cold chain depends on the management of cold chain risks.

In this paper, I have completed the following works:(1)Based on the theory of cold chain risk management, the basic structure of cold chain logistics is analyzed,combined with the current situation of cold chain development,the potential risks and influencing factors of cold chain in purchasing,storage, sorting, transportation and other links have been identified by using process analysis method,and the key risk indicators have been screened through expert scoring,with reference to the principles of index system establishment The cold chain risk evaluation index system is established.(2)After the risk evaluation index system is determined,the fuzzy matter-element analysis method is used to establish the risk evaluation model of cold chain,and the entropy weight method is used to calculate the weight of each index.The risk level of the whole cold chain,as well as the four key links of purchase,storage,sorting and transportation,is obtained by calculating and sequencing the European closeness of each index.(3)I select Shandong gaishi international logistics company as an example to analyze,use data calculation,and then analyze the results of risk assessment,and conclude that the overall risk level of cold chain is high,the risk level of procurement and sorting is high,and the risk level of storage and transportation is medium.

This paper's risk evaluation of cold chain logistics conforms to its actual situation,and the evaluation model is scientific,which has a reference significance for the study of risk management of cold chain logistics.

第1章 绪论

1.1 研究背景

最近几年，我们国家的几个生鲜网络平台那可以说是发展飞速，网络的购买成为一种趋势。这其中生鲜农产品所需要的冷链物流的支持就非常大，与其他发达国家比较，我国的冷链物流的发展是相对落后的。对于一些大型的促销活动如双十一等，销售数据惊人，其中生鲜食品的销售是在逐年递增的，出现的冷链物流繁荣的市场可以说是这些电商平台慢慢开辟出来的。生鲜农产品得到了冷链物流的大力支持，相关国家政策也在逐步完善，虽然其发展得非常迅速，但是也在面临着非常多的意外风险。冷链物流需要冷链工艺的保障，对于技术的要求是非常高的，也需要大量的投资资金，这样才能足够支持一系列的物流活动。我国的冷链发展有些落后，投资与收益不匹配，信息不完备，这些问题使得效率低下。由于冷链设施的不完善，使得生鲜农产品大量损失因此也带来了非常多的财产损失。对于冷链物流的发展虽然国内的关注度越来越高，但是对于其中的相关风险研究还是存在着一些问题的。因此，我们有必要研究冷链物流里存在的风险，明确可以采取的预防手段和措施，有利于改善目前我国冷链行业比较滞后的局面、确保食品安全和物流行业的发展等等。所以在现在电商蓬勃发展却存在风险问题的这一大背景下，冷链物流的风险管理研究就十分重要，我们必须要在认识到问题的基础之上，再去有针对性地采取措施，做到防范风险和减少风险[^[1]]。

物流行业的健康发展需要降低冷链物流风险。冷链物流对于整个物流行业来说，其发展越好也就是行业发展越好，政府对冷链物流也有出一些政策，从2013年一直到2017年我国冷库容量在逐渐增加，年增长率约为20%。经济水平的提高、电子商务的发展和国家的大力支持，这些都为冷链物流的发展提供了帮助。
